A great alternative to chicken parmesan without all the carbs.
Ingredients: Serves One
6oz Chicken Breast 8oz Green Beans 8oz Arugula 3oz Grated Parmesan 2 Garlic Cloves 1 Lemon 2.5 tbsp Olive Oil 1 tbsp Vinegar 1 tbsp Grass-Fed Butter
Pound chicken breast with mallet until it reduces to half it’s original thickness. Coat with 1/2 tbsp olive oil and season with salt, pepper and Italian seasoning blend. Cook chicken in air fryer for 10 minutes at 350 degrees. Remove chicken from air fryer and cover with 2oz of grated parmesan and return to air fryer for 5 minutes.
In a medium non-stick skillet heat 1 tbsp of grass-fed butter. When melted, add 1 tbsp of zest from lemon and 2 coarsely chopped garlic cloves. Add 8oz of fresh green beans and season with salt and pepper. Cover and cook for 10-15 minutes until green beans are cooked through but still have bite. Stir occasionally to ensure butter mixture coats the beans.
In a medium bowl mix 2 tbsp of olive oil with 1 tbsp of vinegar and juice from one lemon. Season with salt and pepper and toss in arugula and 1oz of parmesan.
Plate chicken, arugula salad and green beans together and serve.
